Another super easy lunch full of protein, healthy fats and minerals! Did you know that seafood is one of the best sources to get our essential microminerals? ๐ฆ
This reminds me of an appetizer I used to get at our favorite steakhouse , just with my own twist ๐ ๐คช
To make you need:
Shrimp ๐ค
Butter ๐ง
Garlic powder ๐ง
Salt ๐ง
Lemon juice ๐
How to:
Clean your shrimp, and heat up a lot of butter in your pan. When itโs hot, sear the shrimp until brown on all sides.
Season with salt, garlic powder and optionally pepper! Pour on some lemon juice to taste and optionally a splash of cream! Enjoy ๐
Another classic summer appetizer combo ๐ that brings back tons of memories to my childhood! My grandma Marlies often made this for me as a snack ! I loved the just ripe melon together with the salty prosciuttoโฆ a real treat.
I think itโs ancestrally more appropriate to consume sweeter fruits in the summer when they are ripe- this is something we tend to only make in the summer when melon is in season and only on special occasions since itโs still very sugary! However in combination with the protein and fat in the prosciutto, and other more protein and fat rich foods to go along , a big blood sugar spike should be mitigatedโฆ
To make you need:
Cantaloupe slices (1 small melon is great for a smaller gathering) ๐
1 slice of prosciutto for each melon slice ๐ฅ๐ฅฉ
Lemon and parsley for garnish ๐
How to:
A few minutes prior to serving (fresh is best) slice the melon into wedges and remove the seeds.
Drape a slice of prosciutto over each melon piece. We like to get high quality acorn fed prosciutto since that has the optimal fatty acid Profile!
Today I will be sharing how to make Kรถnigsberger Klopse which is a veal or beef meatball boiled in broth! This is a perfect lunch or dinner ๐ฅ
This is another traditional German recipe that is pretty much animal based already- I love that about German cuisine! The main courses are very neat heavy, all you have to do is leave out the sides ๐ฅฒ
I chose to use veal this time around, but if youโre looking for a higher fat option I would go with beef. My favorite ground beef is from Apsey Farms (use code HELEN10) ๐ฅฉ
Traditionally, bread crumbs are used to help hold the dough together, but you can either omit that since the eggs hold the meatballs together just fine, or you can use coconut flour if youโre not a strict carnivore!
Heat up butter in a pan and sear the diced onions, and seasonings until browned! Combine the browned mixture with the raw ground meat, and the eggs and optionally coconut flour bread or just coconut flour. Season more.
Preheat the bone broth (add some bay leaf) on the stove and poach the meatballs until they are cooked. Itโs important that the broth is not boiling. The time depends on how big they are, we like 2 ounce meatballs! The meatballs will rise when they are ready!
Traditionally, this is served with a gravy and potatoes but we love it with the broth or homemade hollandaise (recipe coming) and shirataki noodles ๐ ๐
We recently made this yummy spread for a little get together we hosted and it was a hit! The combination of various goat cheeses herbs and cream fraiche makes this an acceptable version for those with allergies to cows casein!
To make you need:
Chรจvre ๐ง Cream fraiche ๐ฅ in a 1:1 ratio!
Feta to taste ๐ง
Dill, chives and garlic ๐ง๐ฟ
How to:
Finely chop the herbs, and combine the chรจvre and cream fraiche. Mix together and add in crumbled feta to taste! If you want a creamier consistency you can always add more cream fraiche ๐ if you want a smooth dip you can always blend it! Itโs really up to you!
You can serve this as part of your charcuterie spread but itโs also delicious when served with grilled fish or meat!
These bacon wrapped shrimp are made in a flash and with very minimal ingredients, they are super crispy and delicious and deliver a good amount of healthy fat and protein!
The amount you make can really be tailored to the amount of people you are serving. I like to get jumbo shrimp since they are easier to wrap. Usually I will get about 10 to 12 ounces of shrimp for one person.
To make you need (1 serving):
12 ounces jumbo shrimp (about 6-8 large shrimp) ๐ค
2-3 pieces of bacon ๐ฅ (cut into pieces to wrap shrimp)
Favorite seasonings: Salt, garlic powder, onion powder, paprika and pepper are always a great combo
How to:
Preheat the airfryer to 375ยฐF! Peel and devein your shrimp. Season with your favorite spices!
Cut the bacon strips into thirds and wrap each piece around one shrimp.
Place on the airfryer rack and airfry for 10-12 minutes. You can flip optionally halfway!
These are really yummy dipped into MCT oil Mayo or served with guacamole if you can tolerate it ๐ฅ
Another favorite we like to make when we have guests, this deviled eggs are a real crowd pleaser ๐
They are very simply made and super nutritious!
To make you need:
6 Hard boiled eggs- we do about 8 minutes ๐ฅ
A dollop of mayonnaise- we love Chosen Foods MCT Mayo because itโs seed oil free ๐
A dollop of Cream fraiche ๐ฅ
A spritz of mustard
Chives ๐ฟ
Paprika and curry powder for optional sprinkling ๐ฅน
How to:
Boil your eggs for 8 minutes and let them cool. Peel the eggs and slice them in half. Carefully remove the yolks.
Next, chop the chives and combine the Mayo, cream fraiche, yolks, and mustard with the chopped chives in a bowl. Mash them together and scoop the texture back into the eggs. We usually have 2 egg white shells left over because we are quite generous with the filling!
Garnish the eggs with more chives and optionally curry or paprika powder ๐
These yummy drummies remind my of childhood trips to the renaissance festivals ๐คชthey are yummy and not too complicated to make. If you donโt have a smoker , I recommend you get smoked salt and just airfry for 45 minutes !
Letโs get cooking ๐ฅณ to make you need:
1 turkey leg per person (mine was 1.5 lbs but a lot is bone) ๐
Ghee ๐ง
Smoked sea salt ๐ง
How to:
The first step is optional but really helps bring out flavor, I like to smoke my drumstick at 225ยฐF for about one hour. That helps flavor the meat. I rub it in ghee with smoked sea salt to help seal in the moisture ๐คฉ
Next, I preheat my air fryer to 375ยฐ and air fry my drumstick for about 20 minutes. If you do not have a smoker, I recommend that you air fry for about 45 minutes.
This is a delicious lunch wrap that kind of reminded me of my favorite childhood fast food- a lamb gyro wrap ๐คช
To make you need:
A carnivore wrap- you can either make a simple egg pancake or use the Carnivore Crisps carnivore chicken flour to make a more floury wrap – combine 1 tablespoon of the flour with 1 egg and fry in butter ๐ parmesan wraps or cheese wraps also work, the sky is your limit ๐
Ground lamb ๐
Feta cheese ๐ง
Salt ๐ง
How to:
Begin by making your wrap, and let it cool. In a separate pan, make your lamb meat. You can either scramble the ground meat or make little meatballs! Season with salt and spices of your choice!
When the meat is cooked, place it onto the the wrap and throw on feta cheese! If you have yogurt or pickles on hand, you could also add those in!
We love summertime hosting ๐ especially when we can serve very animal based meals! This is a perfect summer appetizer!
In the summer, itโs more ancestrally appropriate to incorporate some more fruits in the diet since itโs warmer and they tend to be in season, and the increased amount of sun signals our bodies that itโs okay to consume more fruits as carbohydrates – the tomato is actually a fruit ๐ ๐ค๐ป
Of course we always incorporate healthy fat and protein into dishes which the fresh water Buffalo ๐ mozzarella and olive oil covers !
To make you need:
Your favorite mozzarella – we love water Buffalo because itโs A2 milk which is better tolerated , raw is Great too ๐
Fresh ripe tomatoes ๐ - we like bigger ones
Basil ๐ฟ- we have a pan on our patio
Extra Virgin Olive Oil for drizzling
Salt and white pepper ๐ง
To make:
Thinly slice the cheese and tomatoes and wash the basil.
Arrange on a platter in alternating order of cheese, tomato and basil. Prior to serving, drizzle with salt and pepper and olive oil!
Who doesnโt love a yummy piece of pizza ๐๐ and we donโt tend to gravitate towards Convenience foods, but sometimes one just needs a quick meal, so we were very happy to discover these clean, chicken crusts from Zero Carb Lyfe! They are single serve and just made from chicken and some olive oil- perfect for those who are egg and dairy free!
We are also working on a homemade pizza crust but itโs very hard to get the right texture! Stay tuned ๐
We love a mozzarella salami pizza so we spiced the crust up- non carnivores can of course add their favorite tomato sauce ๐ฅซ
To make you need:
1 crust per person ๐
Your favorite toppings- ham, salami, any deli meat, ground meat, even canned fish work well, any cheese ๐ง๐ฅ
Spices like oregano, salt, pepper, garlic, onion ๐ง
Optionally veggies like onion, pepper, etc
Pizza sauce- tomato sauce, or an Alfredo sauce work well. We love a carnivore Alfredo consisting of cheese, butter and some cream ๐ง
How to:
Preheat your oven to 450ยฐF and thaw the crust for about 10 mins. Bake the baked crust for 8 minutes while you prepare your toppings.
Dress your crust and bake for another 8-10 minutes until the cheese browns ๐๐
