Rainbow Cumin Cauliflower Rice 🌈

I hope you’re having a great week πŸ₯° today I am sharing one of our favorite summer sides that makes a great base for a chicken burrito bowl or is a tasty side with grilled trout or steak 🀀

If you’re in need of a quick lunch, throw in some ground meat and make it a fried rice 🍚

Now let’s get cooking πŸ‘©πŸ»β€πŸ³ – this is a fusion between Mexican and Asian, I hope you like it we much as we do πŸ˜‡πŸ˜

To make you need: (2 portions)

1 package frozen cauliflower rice (about 12 ounces)- we love the garlic seasoned one from Whole Foods, they only use olive oil and spices 🍚

Extra Virgin Olive Oil or another ancestral fat for cooking πŸ«’

1 bunch broccolini πŸ₯¦

1 red, yellow and green bell pepper πŸ«‘ (3 total)

Onion πŸ§…

Cumin, salt and garlic for seasoning πŸ§‚

How to:

Begin by heating up the oil in a pan, and finely chop the onion, bell pepper and broccolini πŸ₯¦

Sear the onion for a few minutes and then add the other veggies. Season with cumin, salt and garlic powder.

When the veggies are cooked through to your liking, add the frozen cauliflower rice and let it cook until that’s thawed and as the desired consistency πŸ‘ŒπŸ»season with more cumin and salt πŸ‘πŸ»

Serve with guacamole and your favorite protein 😎

Elk Burgers πŸ”

It’s the middle of grilling season which means that I am experimenting and trying to create the best burger ever 🀣🀩

While I love my chicken burgers and a good old classic keto burger I am trying to eat more wild meats such as elk so I wanted to create a delicious elk burger πŸ˜‡ it’s a great way to eat more nose to tail and regeneratively πŸ˜‡

Elk meat when harvested in the right area is super flavorful and juicy (no weird gamey taste), I love my elk from Northstar Bison, and you can get yours 10$ off if you use my referral code πŸ‘ŒπŸ»

I love to serve these with guacamole and lots of grilled veggies , grilled radicchio and carrot fries 🍟

For each patty you need:

6 ounces ground elk 🦌

Chopped basil and parsley 🌿

Paprika powder and salt πŸ§‚

Grated zucchini and bell pepper πŸ«‘

A bit of coconut flour or egg as a binder (psyllium husk powder can also work)🌈

To make:

Combine the meat and the spices in a bowl, chop herbs and grate the veggies and mix everything thoroughly. Add in as much binder as necessary to make sure the batter doesn’t fall apart on the grill.

Next, form a patty and preheat the grill or airfryer to about 450! Cook for about 4-5 minutes per side. Elk meat is a bit leaner so it could dry out, so keep an eye on it.

Serve with a lettuce wrap, tomato, cucumber slices, and mayonaise/guacamole πŸ₯‘πŸ™ŒπŸ»πŸ€©

Colorful Veggie Meatball Bowl 🌈

Summer veggies like fresh okra, zucchini and bell pepper shine through and come together nicely with fresh herbs and tomatoes πŸ…πŸ«‘

We decided to poach some meatballs in the sauce, but of course you can use any protein of your choice or even crack in some eggs for a summer style shazuka 🍳

We opted for chicken meatballs from Force of Nature which makes the tastiest regeneratively farmed chicken around πŸ’ͺπŸ»πŸ™ŒπŸ»

The recipe is similar to my chicken herb burgers and is so so yummy 🀀

For the meatballs you need (2-3 servings):

1 pound ground chicken πŸ”

1/2 medium grated zucchini πŸ₯’

Chopped herbs 🌿

Salt and pepper πŸ§‚

Ghee, Duck fat or another ancestral fat for frying

Optionally garlic πŸ§„ and onion πŸ§… , and psyllium husk powder/coconut flour as a binder

For the veggies (2-3 servings):

1 pound okra sliced πŸ₯¬

Handful of cherry tomatoes πŸ…

2 colorful bell peppers πŸ«‘

2 zucchini diced πŸ₯’

Green onion πŸ§…

Oregano 🌿

Salt, pepper, garlic powder πŸ§„

Avocado oil for sautΓ©ing πŸ₯‘

How to:

Prepare two pans with your fat of choice and heat it up.

In a Bowl, mix together all your meatball ingredients and form small balls with your hands. Fry them until crispy brown.

In another pan, sautΓ© the okra, bell pepper and zucchini with oregano powder, salt and garlic powder. When those are crispy, add in the green onions and sliced tomatoes. Season again and let simmer. The tomatoes should fall apart and form a sauce.

When the meatballs are ready, place them into the veggie pan and let them simmer. Serve with avocado slices and optionally a pasta swap 😍

Grilled Mussels 🐚

Happy Weekend! Throw these on the grill for a nourishing appetizer 😍

Eating mollusks like clams and mussels is very important since they contain a boat load of nutrients in balance (since you’re literally eating the whole animal). This is critical because we miss out on many essential nutrients if we only eat muscle meats and certain cuts of seafood. You can check out my guide to nose to tail eating here πŸ™ŒπŸ»

I love mussels and usually just throw a can onto my fat fueled salad, but fresh grilled mussels are a fun way to spice it up! For sourcing, check out my guide to seafood, but I normally just get them from Vital Choice. They have pre-cleaned and boiled blue mussels which makes it all so much easier πŸ˜‡

One pound of shell on mussels yields about 4-5 ounces of meat, so plan on a pound per person πŸ™‚

This recipe is incredibly simple, you just need the mussels, a grill and some salt! Then you can serve them with whatever veggie sides you want and optimally butter if you can tolerate dairy- I opt for Coconut Oil Mayonnaise 😍

To make you need:

1 pound of mussels per person 🐚

Sea salt πŸ§‚

How to:

Preheat your grill to 400Β°, then place the thawed mussels onto the rack. Close and grill for 5-6 minutes until the shells open. Discard the mussels who did not open up.

Enjoy with sauces and sides of your choice! I love them with tomato salad, grilled veggies, or sautΓ©ed carrots!

Warm Greek Salad πŸ₯—

Happy Wednesday ! We are celebrating the beautiful weather with grilled lamb kabobs and this warm greek salad πŸ₯—πŸŒˆ

It’s chock full of colorful veggies and healthy fats making it an optimal summer side πŸ˜‡

To make you need:

2 bell peppers πŸ«‘ (we love two different colors)

2 Zucchini πŸ₯’

1 eggplant πŸ†

Red onion πŸ§…

Olives πŸ«’

Olive oil πŸ«’

Lemon juice πŸ‹

Parsley 🌿

How to:

Begin by cutting the veggies into little cubes, heat up some olive oil or another ancestral fat in a pan. Quickly sear the veggies until they are warm but still crisp. Season with salt, garlic and optionally oregano!

Remove from the pan, drizzle with more olive oil, lemon juice and top with olives πŸ«’

Bison Fajita Strips πŸ₯©

1 lb grassfed bison fajita strips (or cut your own using skirt or flank steak) 🦬

How to:

Make the marinade a few hours before by combining the lime juice, spices and oil. Season the meat with salt and pepper and marinade with the liquid for a few hours on the refrigerator.

When you’re ready to make them, heat up avocado oil or tallow in a pan and sear the meat for a few minutes on each side until crisp 🀩

Serve with your favorite sides- we love it with a tortilla swap and guacamole and plenty of grilled veggies or carrot fries 🍟

Easy Deviled Eggs πŸ₯š

Happy Wednesday!! This makes a great snack or easy lunch πŸ˜‡

This is a great healthy snack, appetizer, or a fun way to incorporate eggs into your diet- enjoy with breakfast or lunch 🍳

Traditionally, deviled eggs are made with conventional mayonnaise, which is not great since that’s made with seed oils which are rancid and wreck havoc in your body. We found a great swap made with coconut oil; now mayonnaise is actually healthy and I put it on just about anything πŸ˜‡

To make you need:

6 hard boiled eggs (about 8 minute boil) πŸ₯š

3 tablespoons of mayonnaise- we love Chosen Foods MCT Mayo

1 tablespoon of mustard

Salt πŸ§‚

Pepper

Green onion πŸ§…

Basil 🌿

A spritz of lemon πŸ‹

How to:

Remove the yolks from the boiled eggs and mix it with the Mayo, mustard, lemon, spices and chopped onion and basil. Scoop the mixture into the egg whites and enjoy πŸ˜‰

Foolproof Grilled Cod 🐠

Happy Weekend 🌈 summer weekends are the perfect time to throw on the grill and enjoy fresh seafood 🦞 alongside grilled veggies, fresh tomato salad and plenty of dips such as guacamole and tapenade 😍

I was recently able to get my hands on wild caught pacific cod which is super flavorful and is full of omega 3s πŸ˜‡

I chose to make a lemon pepper cod on the Traeger grill which blackens it very nicely 😍

To make 2 portions you need:

2 6 ounce cod filets 🐠

How to:

Preheat your grill and brush it with oil. Season the fish with the oil of your choice, lemon juice, salt be pepper.

Copy Cat Green Tea Lemonade 🍹

Let’s celebrate midweek with a yummy summer drink 🍹

Summer time always reminds me of Friday afternoons, when my mom took my brother and I to Starbucks after school- our weekly treat 🌈

My go-to was always a β€œgreen tea lemonade half sweet please” but since that’s full of sugar, my mom and I have created a copy cat Starbucks drink to quench our thirst on hot (and not so hot) days 🍹

To make you need:

1 cup of sparkling/flat water πŸ’§

1 teaspoon of matcha powder or canned Matcha- we love Moonshine Matcha 🍡

1/4 cup of fresh lime juice 🍈

Stevia to taste 🀩

Ice cubes 🧊

Optional: fresh mint

To make:

Begin my mixing the water and the matcha powder (you can also use pre made matcha cans), add in the lime juice, stevia and mint and add in the ice 🀩 enjoy 😊
