Garlic Grilled Pork Tenderloin πŸ–

Happy Weekend!! This yummy dish will sure make your loved ones happy πŸŒˆπŸ™ŒπŸ» it’s a light summer dish πŸ–

When pork is sourced properly- ie it’s fed a species appropriate diet and allowed to forage, it tastes like a whole different kind of meat, full of flavor. Pork actually isn’t a white meat, but is supposed to be red, almost like veal and beef! I like to get my corn and soy free pork from Northstar Bison, and you can really taste the difference.

I think high quality pork should be minimally seasoned, to preserve its yummy flavor! I’m just grilling it in butter and seasoning it with some garlic, salt, pepper and fresh herbs 🌿

To make you need (2 portions):

1 pound pork tenderloin πŸ₯©

Butter for searing 🧈

Salt, pepper and garlic πŸ§„

Parsley for serving 🌿

How to:

I like to cut the long tenderloin into little cubes so that they are easier to cook, this way there is also more surface for them to get crispy πŸ˜‡

Begin by heating up butter or another ancestral fat in a pan. When the fat is hot, sear the pork cubes on all sides until brown. Season with salt, pepper and garlic. Let them continue to cook on low heat until they become a bit crispy!

Lastly, garnish with parsley and serve with the remainder of your sides!

Zucchini Fritters 🍳

Summer is just around the is corner so that means that zucchini are in season 😍

As our fridge fills up with them, we have to get creative! I love them simply grilled, in my breakfast veggies, or air fried hasselback style, but they also make a wonderful zucchini fritter!

My mom and I love to make these, but we have some different dietary restrictions so we make one big batter batch and I take out my part before my mom adds in onion, garlic and coconut flour!

For breakfast, you can serve them with some yummy bacon on the side or some homemade tomato sauce πŸ₯“

To make you need (2 servings):

1 medium zucchini

1 egg πŸ₯š

Chives 🌿

Salt, pepper and nutmeg πŸ§‚

Ghee for frying 🧈

Optional:

2 tablespoons coconut flour πŸ₯₯

Psyllium husk (1 tablespoon)

Garlic and onion πŸ§…

How to:

Shred the zucchini and the onion and combine all the ingredients into a bowl.

Mix thoroughly and form little balls with your hands! Heat up coconut oil or ghee in a pan so that you can fry the little cakes.

Fry for about 3-4 minutes on each side until they are crispy brown, and then let them rest on a piece of kitchen roll so that they aren’t soggy!

Enjoy 😊 you can also serve it with smoked salmon and poached eggs, this isn’t a main meal but rather a side dish!

Chicken Shish Kabobs πŸ“

Happy Saturday πŸ₯‘ we are enjoying the weekend with yummy chicken skewers πŸ₯°

These skewers are a sneaky way to eat nose to tail and sneak in some organs- the ground chicken blend I used is a mixture of meat and chicken heart which is spiced with some herbs and air fried to become a crispy skewer πŸ˜‹

Other kabobs we have made include these yummy chicken tandoori kabobs and shrimp skewers 🦐

This meat is from a local regenerative farmer- 1915 Farms which is corn and soy free!! Of course you can also use regular ground chicken such as that from Northstar Bison (also corn and soy free) and if you use my referral link you can save 10$! Check out my guide to chicken here!

To make these you need (2 skewers):

I lb ground chicken mix- I am using the meat and heart blend πŸ“

Spices like salt, curry powder and pepper 🌢

Herbs like cilantro or basil 🌿

Optional: egg, coconut flour or psyllium husk as a binder, garlic and onion powder

How to:

To make the batter, combine chicken, the spices and chopped herbs with the optional binder. Mix everything together and wrap the meat mixture around a skewer. Depending on the length of the skewer, you’ll need 2-4. This usually feeds 2 people!

Preheat the airfryer to 400Β°F and airfry for about 6 minutes on one side and then flip over and cook for another 6 on the other side.

Enjoy with avocado slices, fresh tomato salad, bell pepper zucchini hash, curried cauliflower, or roasted eggplant, and dips like baba ganoush or bell pepper dip 😍

Summer Shrimp Salad πŸ₯—

Happy Wednesday 🌈 This is another fat fueled salad that makes a super yummy summer lunch πŸ˜‡

Like the green bean salad, this meal is full of crunchy greens, melt on your mouth jammy eggs, and a savory vinaigrette dressing and is topped off with crispy grilled garlic shrimp 🍀😍

For one salad you need:

2 eggs πŸ₯š

5 ounces of shrimp 🦐 I love Vital Choice, or check out my guide to seafood here

1 small living lettuce head πŸ₯¬

1 carrot πŸ₯•

1/2 bell Pepper πŸ«‘

Basil and parsley 🌿

A handful of cherry tomatoes πŸ…

Garlic powder and salt πŸ§‚

Vinaigrette: 3:1 extra virgin olive oil and coconut vinegar, 1 teaspoon mustard, salt, pepper, garlic powder

How to:

Boil the eggs for 10 minutes and let them cool off, this can be done ahead of time.

You can either grill the shrimp fresh or use left over shrimp, such as from shrimp kabobs . I like to season them with salt, pepper and garlic powder .

Next make the vinaigrette in the bottom of a salad bowl by combining the ingredients above and mixing them. Next add in chopped bell pepper, tomatoes and carrot ribbons. Top with the lettuce and herbs. Cut the eggs and mix everything and adorn with the shrimp!

Lamb Kabobs 🍒

Happy Saturday- the grill is fired up at our place 😍

This is another fun way to eat lamb which is a super healthy meat choice. It’s particularly high in CLA which is a fatty acid which supports metabolic function and the richest source of dietary carnitine which helps shuttle fatty acids into the cell so that the mitochondria can burn them for energy!

We love to eat Kabobs in the summer because they are such a quick and easy way to create yummy meals. We throw them on the grill with a variety of veggies like Smokey eggplant, curried cauliflower and rainbow veggies and serve them with dips we prepare ahead of time and keep in the fridge- dinner is never boring πŸ˜‹

Right now we are loving this bell pepper dip, baba ganoush, guacamole and olive tapenade!

Other kabobs we have made include these chicken tandoori kabobs, shrimp kabobs and chicken Shish kabobs!

I get my lamb from a variety of vendors, I find that stew meat works well for kabobs since they are already a good size. This lamb is grassfed and from Northstar Bison, and you can save 10$ using my referral link πŸ˜‡

For 3-4 kabobs you need:

1 lb of lamb meat (stew meat works well) πŸ‘

Salt, sweet paprika, sundried tomato and oregano to marinade πŸ§‚

Extra virgin olive oil πŸ«’

Optimally lemon juice to serve πŸ‹

To make:

Marinade the lamb meat for a few hours before cooking- place the meat into a bowl with the olive oil, salt and optimally the spices and herbs. Place into the fridge.

When you’re ready to make the meat, preheat the grill and thread the meat onto skewers. Grill for about 3-4 minutes on each side or until you feel the meat is ready. This depends on how large your pieces are. You want to be careful not to over cook the meat.

When it’s ready, sprinkle with some more flaked salt and optionally drizzle with garlic infused olive oil or lemon juice 😍

Curried Chicken Fried β€œRice” 🍚

Happy Wednesday!! This weeks easy lunch is a take on one of my favorites- fried rice πŸ˜‡

Minced meat, cauliflower rice and curry…what can go wrong 😍

Minced meat dishes are a favorite lunch in our house, they are a great way to get in lots of healthy fats and proteins, as well as yummy vegetables and detoxing herbs and spices! Basically the perfect dish to support our fat fueled lives πŸ™ŒπŸ»

Today’s lunch bowl is full of juicy minced chicken, fresh broccolini, mushrooms and bell pepper, savory green onions and garlic which is all married together by the curry spiced riced cauliflower and basil πŸ˜‡

Other bowls we have made include this chicken fennel hash or shrimp paella bowl 🦐

To make you need (1 bowl):

How to:

Heat up the duck fat and sautΓ© the minced chicken until it’s brown. Season with salt, pepper and garlic powder. Add in the finely chopped green onion, bell pepper, broccolini and riced cauliflower. Let it sautΓ© and season with curry and chopped basil. When it’s almost ready, add in the thinly sliced mushroom!

We like to enjoy this with avocado slices or guacamole πŸ₯‘

Grilled Tri-Trip πŸ₯©

Happy Saturday- I hope you spend the weekend grilling 😍

This Californian comfort food was inspired by my personal trainer! When he told me about this dish my mouth began to water and I ordered a tri-tip right away 🀀

We made ours on the new Traeger smoker, but you can do the same in the oven and then finish it in the pan or on a regular grill!

The left overs can be eaten cold the next day on a bread swap with eggs and avocado or a fat fueled breakfast, or in a big salad for lunch!

To make you need:

1 tri-tip roast πŸ₯©- about 1.5 lbs

Salt πŸ§‚

Spices of your choice as a rub: you can use sweet paprika, garlic, onion, etc 🌢

To make:

Trim the silver skin off of the roast and rub with salt. Keep in the fridge for a few hours. The salt helps maintain the moisture!

When you’re ready to cook, preheat your smoker to 225Β°F and smoke for about an hour until the thickest part of the meat is 125Β°F.

Remove the meat from the smoker and preheat the grill to 450Β°F! Rub the meat with seasoning of your choice When the grill has reached the temperature, grill for 3-5 minutes on each side until it’s crispy.

Slice against the grain and Serve with grilled veggies , tomato salad, and guacamole πŸ₯‘

Warm Sardine Noodle Salad πŸ₯™

Happy Wednesday- this weeks easy lunch bowl involves lots of healthy omegas and fiber to support you through your busy day🌈

Germans slather just about anything in mayonnaise and call it a salad 🧐 (yes we have meat salad which is basically sliced bologna with Mayo…), so I guess I can play the German card and call this bowl a salad πŸ˜‚

This is a really easy way to recycle grilled rainbow veggies, get in those healthy omegas from a can of sardines, crunch on some lettuce and have some miracle noodles all slathered in MCT Mayo and guacamole! In other words, this is a texture explosion but I kind of like it πŸ˜…

Best thing yet, it took me only 10 minutes to throw together.

To make you need:

Butter lettuce πŸ₯¬

Cucumber πŸ₯’

Guacamole or avocado πŸ₯‘

A can of sardines or other left over fish 🐠

Miracle noodles or another pasta swap 🍜

Shredded broccoli and carrot slaw πŸ₯¦

Left over rainbow veggies 🌢

Cilantro 🌿

Salt πŸ§‚

How to:

The only warm component of the bowl are the noodles and slaw which can be seared together with some cilantro and salt in a pan until they are crispy!

If you want you can warm up the grilled veggies in the airfryer. Chop up the cucumber and the butter lettuce and place it into your bowl. Place the noodles and slaw on top, followed by the rainbow veggies and the can of sardines πŸ˜‹

Eat with guacamole and mayonnaise – trust me on this one, it may sound strange

Hidden Heart Chicken Meatballs πŸ”

Happy Saturday 🌈 this week I am sharing one of our favorite ways to eat nose to tail and get lots of healthy protein and fat πŸ™ŒπŸ»

We are always looking for ways to eat the most nutrient dense foods- did you know that many people who eat a Whole Foods based diet are actually nutrient deficient because they only eat muscle meats?

Many processed foods are fortified with nutrients so if you’re not eating those (which you shouldn’t be), you may be deficient unless you eat nose to tail and incorporate shellfish and mollusks as well πŸ™ŒπŸ»

These chicken meatballs are a great way to sneak in some heart, which is full of CoQ10 which is very important for your mitochondrial function as well as our heart health (they always say like supports like) πŸ«€

We’ve also snuck heart into these skewers and have grilled beef heart ❀️

To make these yummy chicken meatballs you need:

1 lb ancestral chicken blend, we got ours from 1915 Farm but Force of Nature also sells a good ancestral blend, check out my guide to chicken here!

Fresh chopped basil 🌿

1 egg 🍳

2 tablespoons coconut flour πŸ₯₯

Cumin, truffle salt and smoked sea salt πŸ§‚

Duck fat or ancestral fat for frying 🍳

To make:

Combine the minced chicken, egg, coconut flour, onions, herbs and spiced in a bowl and mix well.

Heat up the duck fat in the pan and form little meatballs with your hands. 1 pound is generally enough for about 6 meatballs!

Fry until crispy golden on each side, about 10 minutes on each side!

Enjoy with your favorite veggies like sautΓ©ed carrots, crispy Brussels sprouts, or grilled eggplant and lots of guacamole and bell pepper dip! These can also be enjoyed cold on a fat fueled salad or as a quick snack!

Slow Cooker Lamb Meat πŸ‘

I love shredded beef and bison but once in a while, I really like to make shredded lamb in my slow cooker using lamb stew meat! Lamb is a great source of carnitine which help our mitochondria pull on fatty acids to burn for fuel!

This is such an easy meal to prepare, just throw everything into the slow cooker, and let time do its magic πŸ˜‡

I love to eat this with my lunch noodle bowl and lots of avocado πŸ₯‘

To make 2 portions you need:

How to:

In the Morning, I like to throw the stew meat into the slow cooker with all the spices and just cook the meat on low for as long as I have time. Usually 8 hours or until it is shredable! Leftovers can be frozen and reheated very well!
