Nose to Tail Eating 🍽

When eating meat and seafood, I make an effort to honor the animal and eat as much of it as possible. This includes eating a variety of cuts of meat (bone in cuts included), organ meat (aka offal), and connective tissue (bone broths, oxtail, shanks, etc).

At first, I had to get used to eating things that weren’t so traditional like chicken breast, filet Mignon or pork tenderloin, but now I enjoy the “weird” cuts like venison shanks, bison ribs, chicken leg quarters and leg of lamb. I have fun shopping for cuts I’ve never had before and have learned to love the huge flavor variety the different cuts bring 🤩

I also pay attention that the animals are raised and fed the way nature intended them to be:

Chicken, Turkey and other Poultry 🦃 🐔: always pasture raised, organic, non-GMO and ideally corn and soy free feed. Also, I never buy chicken that is “vegetarian fed”, since chickens and turkeys are omnivores and need to forage on herbs, plants and bugs on pasture to develop a healthy nutrient profile. I really love to roast a whole bird (turkey, chicken, game birds and duck) but we also buy breasts (bone in is really yummy), wings, ground meat and leg quarters 🍗

Gulasch is a great way to use tougher cuts of stew meat!

I like to buy my bison and beef from North Star Bison, US Wellness Meats and Certified Piedmontese. The latter carries a heirloom beef type that has double the amount of protein fibers, making it optimal for those who have the goal to build more lean mass.

We also like butcher box for their filet mignons and Hot Dogs!

Pork 🐷: always heritage breed and pasture raised, fed with acorns of possible!

We get our bacon from butcher box or US Wellness Meats.

We like prosciutto from La Quercia, they also have a collaboration with White Oak Pastures in Georgia and have some limited time edition spreads and deli meats.

Whole Foods Market also has a collaboration with Les Trois Petit Conchons where they have a pork pate product that is raised properly and without funky ingredients, and we think it’s quite tasty! It’s a sneaky way to incorporate pork liver into your diet 😌

White Oak Pastures, US Wellness Meats and Butcher Box also have a wide selection of pork chops, tenderloins and ground pork which we like to use in a variety of recipes like Schnitzel or Mince Sauce.

Game Meat 🦌: I have come to love wild game such as wild boar, venison, axis, elk, and south Texas Antelope and enjoy everything from ground meats, to tenderloins, rib chops and shanks. I get mine exclusively from Broken Arrow Ranch where the animals are truly living in the wild and shot the most humane way possible.

Preparing venison meat sounds scary but cuts like the tenderloin and ground meats work very similar to beef and pork. The ribs and shanks need a little bit more preparation since they are very lean and can easily become tough when cooked too long or too short.

I like my venison steaks medium rare since they are very lean and easily dry out! My all time favorite are axis shanks (osso bucco)

When cooked for a long time, the collagen and bone marrow releases from the meat and creates a super rich and nourishing flavor in the mouth. The meat falls right off of the bone and I benefit from all of the abundance of nutrients in the connective tissue, marrow and bone 🍖

Lamb 🐑: only 100% Grass fed and finished and pasture raised! I get mine from US Wellness meats and am a fan of loin chops, rib chops, shanks and ground lamb.

Since I am the only one in my family that really likes lamb I typically don’t buy larger roasts like leg or shoulder but those are super yummy and nourishing cuts as well and should be included when eating nose to tail!

Leg of Lamb Steak

Rabbit 🐇: always pastured and preferably wild! I get mine exclusively from White Oak Pastures where they are part of the regenerative agriculture protocol! They sell Whole already precut rabbits that typically come in 8 pieces. I then prepare the different cuts to my liking.

Rabbit meat is very lean and tender and can be prepared similarly to chicken!

When you have a high quality, well raised piece of meat, I have noticed that you need very little spice to make it taste amazing. I usually only use ghee and flaked sea salt to season my meats.

Organ Meats: these parts of the animal are incredibly nutritious and offer a whole lot of bioavailable nutrients. Our ancestors actually went after the organ meats and bone marrow before they scrapped the muscle meat off of the bones.

As you can see on the diagram, beef liver is an excellent source of all kinds of vitamins and minerals. The nutrients found in liver and other offal/meat is also more bioavailable than that of plants giving you more bang for the bite 💪🏻

When buying organs and organ products, it is critical to buy only high quality products where you are 100% sure that the animal was raised correctly. You can only benefit as much as the animal is healthy.

US Wellness Meats has a good selection of tasty organ meat sausages such as Braunschweiger (liver), Liverwurst (liver, heart and kidney), head-cheese (heart and tongue), as well as various organs that can be purchased to make your own dishes!

The premade sausages are ideal for those who want to experiment or try offal for the first time. I like the braunschweiger and the liverwurst and I heat them up in the pan and eat them with avocado or butter. You can also grind them up with butter and use them as a spread on grain free crackers or bread.

Many online butchers like US Wellness Meats also sell ground meat blends that include organs like heart, kidney and liver and are a good way to get your dose of offal in the form of a burger, chili, Bolognese Sauce or as meatballs 🍔🍝

I personally think that chicken and beef hearts are a good starter organ meat. Since the heart is a muscle, the texture is similar to that of muscle meats which makes it more familiar. Heart is full of CoQ10 which is very important for mitochondrial health 💪🏻

Another popular way to eat chicken hearts is to grill them on a kabob and to serve with pesto or herb butter 🧈🌱

Beef heart tastes very similar to a tougher cut of steak. It’s best prepared medium rare😍

Other “starter” organs include chicken and beef livers which can be prepared easily by simply sautéing them with butter and onions in a pan. It’s best enjoyed rare, and unlike heart it has a softer texture. It’s very filling and I usually don’t eat more than 2-3 ounces at once! Another way to incorporate liver is by making your own liver pâté 👩🏻‍🍳

Bone Marrow is the ultimate super fat and can be made into a super yummy spread or enjoyed roasted in the oven over steak 🥩!

It can be roasted and whipped with salt into a butter consistency and enjoyed with vegetables or these bread swaps.

I get my marrow bones from North Star Bison or US Wellness Meats and order them “canoe style” meaning that they are split open so that they marrow can be easily scooped out. Sometimes when I make bone-in meat dishes, I like to crack open the bones and scoop out the marrow for a nutritious boost 💪🏻

You can also make a nourishing bone broth by simmering marrow bones with apple cider vinegar, veggies, bay leaf and spices for a long period of time. This releases nutrients like calcium and amino acids out of the bone and lets the bone marrow release its precious fat and fat soluble nutrients 😜

There are also many recipes out there for sweetbreads, kidney, tongue and even testicles. The possibilities are endless and you can benefit from every type of organ!

Seafood 🦞🐟: I get my fresh fish and seafood exclusively from Vital Choice. We love their sockeye and king salmon filets as well as their mahi mahi, Nova lox, trout and ahi tuna steaks! Their products are sourced sustainability and from clean waters which is important when buying seafood! You should avoid farmed seafood at all costs, since fish their are kept in dirty pens and fed grains creating an unhealthy fat and protein profile. The only exception to that are some trout and salmon farms like Ora Salmon.

We avoid large fish like tuna, swordfish, sea bass and shark because they tend to accumulate a lot of toxins and heavy metals! The same goes with a lot of canned fish so we stick to brands like vital choice, safe catch or wild planet for canned fish in the SMASH (salmon, mackerel, anchovies, sardines, herring) group which are typically low in toxins and full of healthy Omega 3s

Other yummy options are lobster, mussels, clams, octopus/squid, oysters, crab and shrimp and it’s best to always grill them with the shell on so that the nutrients can come out and make the meat more nutritious! You can also eat nose to tail by grilling a whole fish or buying non-filet cuts like cheeks or bellies. I also always eat the skin (I love it really crispy) and sometimes the eyes of a whole fish!

Whole Roasted Branzino 🐟

Yesterday we made one of our favorite at home which is a whole roasted Branzino!

Roasting a whole fish ensures that the filets remain incredibly juicy and that the meat absorbs all the nutrients from the skin and bones and is a great way to eat nose to tail and honor the animal 🙌🏻😋

Making the fish is a lot simpler than it seems! We made sure to get a gutted and scaled fish and simply rinsed it, patted it dry and then seasoned it liberally on the outside and the inside. I also recommend that you chop off the head, that makes it a lot easier to handle when you remove the flesh from the carcass. You can cook the heads and remaining carcass and make a yummy fish stock 💪🏻😉

The gills and teeth are very sharp, it’s obvious that Branzinos are predator fish

To fed 3 people you need 👨‍👩‍👧:
2 Branzino 🐟
Lemon 🍋
@maldonsalt flaked sea salt
Pepper
Zatar seasoning 🧂

After you season the fish liberally on the inside and outside, place lemon wedges into the open cavity

Next place into the oven at 400 degrees and cook for about 20 minutes or until the meat is white abs falls off of the bone! We made it on a grid rack so that the heat hits the fish from all sides evenly ensuring it’s cooked through all the way. Our fish was super juicy and tender!

When removing the meat, be careful since the small fish bones are often times still in the filet. If they aren’t sharp they can be eaten but you don’t want to choke…

If the skin is descaled it can of course be eaten (it’s my favorite part when it’s crispy 😍😋)

Easy Air Fryer Shrimp 🍤

Shrimp are a super healthy and delicious protein option that goes along with many things! They are full of minerals like zinc, vitamins like B12 and choline and are a good source of dietary cholesterol which is vital for the integrity of our cell membranes!

These shrimp only take 10 minutes to make and go along with anything from salad, the grilled vegetables or a pasta alternative! We like them dipped into homemade guacamole (recipe will come soon) 🥑 or Chosen Foods Keto Mayo 🙌🏻

They are also very customizable to your taste and can be seasoned anyway you like.

We went for curry, salt and pepper but other yummy options include salt and garlic or maybe even bbq rub 😋. We let the shrimp marinade over night but that is not necessary!

Next, Simply heat your toaster oven/air fryer to 400 degrees Fahrenheit and cook for about 10 minutes.

Carrot Fries 🥕🍟

These are a great #healthyswap for fries or sweet potato fries and are easily made in the air fryer! We love these on #burgernight with @chosenfoods keto Mayo which is based on MCT Oil and @primalkitchenfoods primal ketchup 🥫

To make these, all you need is:
An air fryer- I used a Phillips basket air fryer
Carrot sticks (we like the pre-cut sticks from Whole Foods) 🥕
Avocado oil @chosenfoods 🥑
@maldonsalt flaked sea salt, pepper and curry 🧂

To make, simply toss the carrot sticks in the spices and avocado oil and preheat the airfryer to 390 degrees! I typically leave them in for 20 minutes but depending on the thickness of the carrots the time may need to be modified! Simply check a few times and toss the fries around so that they cook evenly!

They are done when they are soft and a bit browned and crispy on the outside 😋

Bolognese Sauce 🍝

This tastes great with a pasta swap or with our keto lasagna!

Making Bolognese Sauce is simple and can easily be served with a variety of dishes! When made with high quality ingredients, it is a really yummy and nourishing dish 🙌🏻🍝

Simply sauté the ground meat of your choice (beef, bison, pork, turkey, chicken, venison, or a combination) with the fat of your choice (lard or tallow work well, but ghee is yummy too)! 🐷🐮🐔

Next add minced garlic and onion, oregano, salt and pepper and let them simmer 🧅🧄🧂

If you want to enhance the flavor, you can also throw in some diced carrots, celery or other veggies 🥕

Lastly, add in your favorite vegetable oil free marinara sauce (we love Raos Homemade) or make your own using this recipe 🍅

Let the sauce simmer on low for at least an hour before you enjoy the rich goodness 😍

Myth Buster: Eggs 🍳

Today I want to dedicate a post to the humble egg which is often times misrepresented and under appreciated 🍳😵

Eggs have been demonized for their high cholesterol content and many of us have been told to limit our consumption to be “heart healthy”. But I’m here to let you in on a little secret…you can enjoy your eggs (and as many as you like) without having to worry 😊

Total cholesterol is not as indicative of health as the differential (HDL, LDL, vLDL) and triglycerides. The different types of cholesterol can tell the entire story of your health.

Eggs do in fact contain 200 mg of cholesterol per egg, but exogenous cholesterol from food sources actually does not raise LDL cholesterol (bad cholesterol), only the HDL (high HDL= health).The body manufactures its own cholesterol (mainly LDL) from sugar. When sugar and starch are over consumed the smaller LDL cholesterol builds up in the arteries leading to high serum levels. The best way to prevent this is to eat a high fat diet and low in sugar and starch.

Cholesterol is actually the backbone of all sex hormones and hormones can begin to fluctuate and decrease when not enough cholesterol is present!

Whole eggs truly are a super food containing heart healthy CLA, brain boosting Omega 3 fatty acids and choline, bio available vitamin A, D, and K as well as b-Vitamins, especially folate and b12 which are essential for healthy mitochondria. They also offer 6 g of complete protein per egg which is essential for proper body function and tissue growth.Of course, proper sourcing is necessary to ensure the egg has the optimal nutritional profile. You can recognize a nutrient dense egg by its striking orange yolk.

Always eat the yolk 👌🏻

When buying eggs, try to get them from a local farmer who keeps their birds outdoors where they can forage (chicken are not vegetarian)! Alternatively look for pasture raised organic eggs such as those from

My go to breakfast is always an egg pancake, which is super easy to make 🍳👩🏻‍🍳
Simply beat as many eggs are you like (I use 2-3) with salt and pepper, heat up grass fed ghee in a pan and fry the “batter” for a few minutes on each side. I love to top it with avocado and butter @lewisroadusa (smoked salmon @vitalchoice or liverwurst @uswellnessmeats are super yummy too!)

Also, the less processed the egg is, the more nutrients are retained. The best ways to prepare eggs are poached and super soft boiled or the egg pancake (which I make on low-medium heat) until it is barely set. Frying can damage the cholesterol in the egg and the last thing we want are oxidized fats 😅

Apart from chicken eggs, you can also get duck or quail eggs which are similar nutritionally but are a fun way to spice it up!

Healthy Baked Good and Pasta Swaps 🥖

Unfortunately, when following a fat fueled and gluten/grain free lifestyle, regular bread and baked goods are off limits 🙅🏻‍♀️

Luckily, there are some super tasty alternatives out there that make it feel like we aren’t missing out on 🥖. Here I will be sharing some of your favorite brands and products!

UnBun: Unbun products are amazing and probably the favorite in our house! They make everything from toast to bagels and baguettes, pizza crusts and burger buns! They also make tortillas so taco and burger night can still happen 🌮🌯🍕🍔🥖

The toast tastes good both sweet and savory but my personal favorite is to eat it with butter or ghee and a generous wallop of keto chocolate nut butter 😍 or our homemade cranberry sauce!

We love a good lox bagel using Unbun 🥯

Base Culture: we love the classic keto (red package) and nuts and seed (green packaged) toasts! These can also be eaten sweet or savory but we prefer them savory with liverwurst or prosciutto and butter! Or of course as an avocado toast 🥑🍞🥓

Siete Foods: the almond flour tortillas are our go-to for fish or pulled turkey tacos with plenty of keto Mayo (we love Chosen Foods) and Guac 🥑🌮

The best way to enjoy them is to heat them up in the oven or with ghee in a pan. They are a bit crumbly so I wouldn’t use them to make a burrito!

Julian Bakery: this company has a wide variety of low carb and grain free breads and wraps. My mom really likes the paleo wraps and I’m a fan of the coconut bread! They also sell yummy granolas😍

Out of all the breads, I think this one would be best suited to make a French toast with!

I love to eat the paleo Coconut Bread with foods that are a bit more juicy such as tomato, butter, or tuna/chicken salad since the bread is fairly absorbent. It also tastes fabulous buttered and dipped in soup 🍜

Cappellos: this company has a pasta and pizza line that is grain free and based off of almond flour. The spaghetti, lasagna and fettuccini pasta are suitable for a fat fueled approach, while the gnocchi and cookie dough unfortunately are too starchy.

If you’re in the mood for a pizza, they have a keto and a regular line that are both low carb 🍕 we buy the regular naked crust since it’s dairy free!

Naked pizza crusts make it super easy to make a healthy customized pizza. For those who are not sensitive to dairy, Cappellos also sells pre-topped pizzas 🍕

Miracle Noodle: these noodles come in many fun shapes (even as rice) and are made with konjac flour which is an ocean plant that is high in fiber and helps bind to toxins in the gut! They can be a bit smelly so I always rinse them before I use them, then I simply heat them up in a pan with ghee and add them to whatever dish I want to eat them with. They are fairly neutral in taste so they go with many different sauces, but their texture is pretty similar to that of pasta.

They can be enjoyed with Gulasch, Pork and Beef Mince, Bolognese Sauce or with any other pasta dish 🍝

The rice version can be used to make a rice pudding or used in a stir fry/fried rice dish 🍚

Miracle noodles can easily be integrated into your favorite pasta dishes! Check out my super simple tuna pasta here 🐠

Veggie Noodles/Rice: you can easily make your own vegetable noodles out of zucchini, carrot, cucumber or heart of palm using a spiralizer! They are also sold pre-made in many grocery stores either frozen or in the produce aisle! I prefer to make my own since we can make as much as we need and avoid them spoiling 🥕🥒

Riced broccoli and cauliflower also make a great alternative to rice in stir fries or to go along with the my Pork and Beef Mince

Popular brands are “Palmini” (heart of palm pasta) and “Veggie Noodle Co” (they make zoodles and also riced cauliflower)

Health Benefits of Chocolate 🍫

Hey there! What if I told you that chocolate isn’t a candy but actually a good (if enjoyed the right way 😋)!

That’s right, cacao is one of the most nutrient dense super foods on the planet, named “food of the gods” (theobroma cacao) by the Mayans 😍

It’s also no surprise that so many people are happy when they eat chocolate- it’s full of tryptophan which is a precursor to serotonin which is also known as the happy hormone 🥰

Cacao contains a plethora of antioxidants which help neutralize free radicals in the body, strengthen the immune system, and boost your heart health (they have been shown to lower blood pressure which reduces the risk of stroke and coronary heart disease ❤️).

The epicatechins increase nitric oxide and blood flow which increases athletic performance and protects the cells/increases their insulin sensitivity which is important in protecting the body from diabetes!

The cacao butter is comprised of a super healthy fatty acid called stearic acid (a saturated fat known to lower LDL cholesterol), which is incredibly stable and does not oxidize quickly, making cacao super shelf stable 🙌🏻 (not that it lasts very long in my house). It also contains a lot of oleic acid which is also found in olives and avocados! It’s also packed with vitamin E which is essential for vision, healthy skin and reproductive health!

The flavonols positively effect brain function 🧠 possibly by increasing blood flow! Cacao is also a natural stimulant that provides clean and lasting fuel throughout the day, and is so gentle that it can even be enjoyed late in the day without impairing sleep 😴

As you can see, cacao is a powerful food source that should not be skipped! But as with everything, it’s important to consume high quality chocolate that does not contain added sugar and stabilizers. It’s also important to make sure the chocolate is “bean to bar” which is an indication that the chocolate is minimally processed.

To PUFA or not to PUFA? 😈 That is not a question… PUFA stands for polyunsaturated fatty acid which is relatively unstable and oxidizes easily. Although we need some PUFAS in our diet like Omega 3, Vegetable oils such as canola and sunflower oil which are used in all kinds of products and cooking contain harmful compounds that hijack how our mitochondria function leading to low energy and metabolic syndrome, which Dr. Cate Shanahan explains wonderfully in her books Deep Nutrition and The Fat Burn Fix!

Vegetable oils are toxic because the fats they contain are oxidized. And it’s the double bonds that make PUFAs susceptible to oxidation. But omega-3 fats have more double bonds than omega-6, generally speaking, and so seeds with a high omega-3 content, like canola, actually lead to more toxic degradation products than seeds with a high omega-6, like soy (all else being equal).

Another key point is that the body does not recognize man-made fats and does not have the enzymes to break them down, creating a lot of inflammation in the body.

But fear not, you can easily escape the shackles of these Frankenoils by simply grabbing a bottle of extra virgin olive oil or delicious ghee next time you prepare a yummy meal 🤤

Depending on the temperature you can use a variety of natural fats such as olive oil, avocado oil, coconut oil, animal fats (tallow, lard, duck fat, etc), butter and ghee to whip up a nourishing dish.

In General, fats that are solid at room temperature such as lard, ghee and coconut oil can be heated very high, and are safe to cook with. Although olive oil and butter can be used, it is better to use them for lower temperature cooking. If you see smoke when heating the oil, please discard it immediately since it has oxidized and is no longer healthy to use.

When using animal fats, it is always important to watch out for sourcing- always opt for grass fed and pastured varieties. Fatworks has a great selection.

Animals raised on a high PUFA diet ( lots of corn, soy and grains) can also develop an unhealthy fatty acid profile.

PUFA in Chicken Meat

Just like humans, these animals lack the ability to process these fats in digestion and thus bioaccumulate the inflammatory fat they eat into their own fat, cell membranes, nervous tissues, etc. The result is pork and chicken polyunsaturated fatty acid (PUFA) content, namely the problematic omega-6, linoleic acid, in an amount far higher (10x in some cases) than what is ancestrally appropriate.

The same thing happens to humans. Our bodies have never had to process anything other than low single digit % consumption of PUFA, yet we are now at 25%+ consumption of our total caloric intake. And guess what? That increase in consumption goes straight into our tissues. Look at this graph of linoleic acid in human adipose tissue over time. Same thing happens with pigs and chickens.
