Venison Bacon Stew 🦌πŸ₯“

Every now and then, we love a nice and hearty stew and this is just that! Venison is very rich in nutrients and minerals, and the bone marrow and bone broth give this a nice boost of collagen, healthy fats and nose to tail nutrition including some growth factors and immune compounds πŸ˜‰ I call this is bowl of health πŸ₯Ή

This recipe can be made completely carnivore if you omit the onions and the spices, but in this case, we decided to add them for some additional flavor.

To make you need (2-3 portions):

Our venison is from Maui Nui Venison, which is axis deer, but elk or even bison or beef will work just as well πŸ™ˆ

2 lbs stew meat πŸ₯©

2 tablespoons rendered bone marrow or tallow (or butter / ghee) 🧈

2-3 cups or bone broth (home made is best) πŸ’ͺ🏻

4 slices of corn and soy free bacon – we love Apsey Farms (use code HELEN10) to save πŸ₯“

1/2 half cup diced onion πŸ§…

Salt, white pepper, garlic powder and bay leaf powder πŸ§‚

How to:

Begin by melting the rendered fat (I choose bone marrow for maximized nutrition) in a pot. Dice the onion and sear until brown. Season with slices of your choice πŸ§…πŸ§‚

Dice the stew meat and remove any tough bits. Add the meat to the onions and let it brown. Continue to season.

Slice the bacon and add it to the meat. Let it sear until the bacon is cooked. Next, add bone broth until the meat the covered. As you can see, my bone broth is very rich and solid at room temperature (I used soup bones from Apsey Farms/ use code HELEN10) which helps make this stew even more nutrient rich.

Bring the stew to a mixture and simmer for a few hours until the meat is tender. Continuing to add liquid (water or broth) to avoid it from getting dry.

We like to serve this with miracle noodles which are anti-nutrient free and add some nice variety!

Veal Stroganoff πŸ₯©

I grew up eating creamy veal cutlets with potato pancakes at the pub across from my grandparents house in Germany πŸ‡©πŸ‡ͺ called ZΓΌricher Geschnetzeltes there, this dish can be enjoyed on a carnivore-ish diet and is such a treat πŸ˜‡

To make you need (2-3 portions ):

2 lbs veal cutlets πŸ₯©

Butter for frying 🧈

Grassfed cream πŸ₯›

Salt, white pepper, garlic , Bayleaf powder πŸ§‚

Miracle rice for serving 🍚

How to:

Begin by thinly slicing the veal cutlets and heat up butter in a pan. Sear the veal until browned, then season with salt, and white pepper.

Pour on as much cream as you would like (we like a lot :)) and then season with the garlic aber Bayleaf powder! Let it simmer a bit! If you want to serve it with miracle rice, drain the miracle rice and add it to the pan 😍

Fool Proof Flanken Style Ribs πŸ₯©

Flanken Style aka Korean style short ribs are a fun, fast, and crispy way to enjoy the more traditional braised short ribs! I love these super grass fattened short ribs from Apsey Farms (use code HELEN10) to save πŸ™ˆ

I love to eat these for lunch after a workout to fuel my muscles πŸ’ͺ🏻

To make you need:

1 lb of Flanken style short ribs πŸ₯©

Sea salt πŸ§‚

Airfryer

How to:

Preheat the airfryer to 400Β°F, pat the meat dry and arrange them on the airfryer rack. Salt heavily on each side. Airfry for about 20 minutes, flipping halfway !

Enjoy with extra butter 🧈

Phospholipid Platter 🍣🧈🍳

One of my good friends @curingcarmen thought me about the importance of animal based phospholipids which are very simple terms, a fatty acid that protects our cell membranes. Egg yolks, butter, and salmon are full of them!

This plate is on honor of her ❀️ and you should totally check out her Instagram for more info on phospholipids 😜 she’s the expert 🫢🏻

To make 1 plate you need:

6-8 ounces of your favorite salmon 🍣 I love wild king salmon

2-3 eggs πŸ₯š

2-3 tablespoons butter 🧈 and/or ghee for frying and eating

Grated raw sheeps pecorino cheese πŸ§€

For the hollandaise:

1 egg yolk 🍳

50 g butter 🧈

How to:

Begin by heating up ghee in a pan. Pat the salmon dry and salt it from all sides.

When the pan is hot, sear the salmon skin side down for 3-4 minutes. Flip and cook for 2 more.

In another pan, heat up more ghee and crack 2-3 eggs in a bowl with some salt, beat them and scramble.

Top the finished eggs with grated raw sheeps milk pecorino or another one of your favorite cheeses. I always look for raw cheese, ideally A2 dairy.

Top the salmon with homemade butter and / or hollandaise. To make that, slowly blend an egg hold with 50 g of melted salted butter. Be sure that the butter isn’t too hot or the egg yolk will split. You want the mixing process / pouring butter into egg to take a minute at least to gently emulsify it.

Chicken and Pork Meatballs πŸ§†

Meatballs are a super easy carnivore meal prep item- we love to make a batch at the beginning of the week to have something for a quick lunch during the beginning of the week, they never last long πŸ˜‡

These are carnivore-ish, so not suitable for those on a strict elimination !

To make you need:

1 lb ground pork πŸ–

1 lb ground chicken πŸ”

1/8 of an onion chopped (optional but not really ;)) πŸ§…

2 eggs 🍳

1 tablespoon physllium husk (optional binder)

Lard or ghee for frying 🧈

How to:

Mix all the ingredients together and form little balls- we like them to be about 4 ounces each.

Heat up lard in a cast iron and fry each meatball for about 8-10 minutes on each side!

Enjoy πŸ˜‰ if you’re not strict carnivore they taste yummy on a lettuce up with some mustard and pickles

Oven Roasted Veal BreastπŸ–

I am a huge fan of veal, but with veal it’s always critical to check that it was raised humanely, meaning not tethered and raised together with its mom on real cows milk! You can tell the veal is high quality when the meat is bright red- ie the calf was not anemic πŸ˜‡ I am lucky to have access to high quality veal from Billy Doe Meats!

This bone in veal breast aka brisket was a real treat for me this past week! I roasted it slowly in the oven with sea salt, rosemary and bone broth and enjoyed the delicious fatty goodness 😍

While veal tends to be fairly lean, this veal breast is pretty marbled (lots of healthy saturated and monounsaturated fatty acids) and contains lots of tendons and bone which provide collagen and many minerals 😊

To make you need:

1 bone in veal breast (3 lbs) πŸ₯©

Rosemary πŸƒ

Sea salt πŸ§‚

Bone broth

How to:

Preheat the oven to 300Β°F . Place the veal breast in a oven dish, rub with salt and sprinkle with rosemary.

Add 3 cups of bone broth to the dish (you may have to replenish as the breast cooks) and cover the dish with a foil tent.

Roast the meat for at least 3 hours (the longer the better) and check occasionally to see if there’s enough moisture!

Carve it when it’s ready abs enjoy ! I added lots of grass fed butter and some egg yolks 🧈

Airfryer Ribeye Bites πŸ₯©

Ribeye bites are one of my favorite lunches! I can make them in a flash (under 10 minutes) and they are the perfect flavor explosion of crispy fat, tender meat and salt πŸ˜‡ I love to call these my carnivore popcorn 🍿

My favorite ribeye bites come from Prime Rib trimmings from Apsey Farms (use code HELEN10) standing rib roasts 😁

To make you need:

Little chunks of ribeye (the more fat the better) πŸ₯©

Flaked sea salt πŸ§‚

How to:

Preheat your air fryer to 425Β°F. Cut your meat into little chunks and pat dry. Season heavily with sea salt and arrange on airfryer rack.

Airfry 5-8 minutes until the fat becomes crispy brown. Flip and cook another 1-2 minutes. I usually add more butter when I eat it as a meal since grass fed ribeye tends to be leaner.

Lamb&Feta Meatballs πŸ§†

Here is another super easy carnivore meatball recipe that works super well for meal prep, and is also chock full of healthy saturated fats and protein!

Lamb is one of the best sources of stearic acid which is a special saturated fatty acid that helps out mitochondria optimize energy production πŸ‘πŸ»

When it’s grassfed, it’s also very rich in omega 3 fatty acids plus it’s so delicious 🀩

To make you need:

1 lb ground lamb πŸ‘

150 g goat or sheep feta πŸ§€

Salt, garlic powder to taste πŸ§„πŸ§‚

Tallow for frying 🧈

How to:

Combine the ground lamb and crumbled feta (we chopped our block) in a bowl with salt and garlic powder!

Mix well, and form 2 ounce balls !

Heat up tallow in a pan, when it’s hot, sear the meatballs about 8-10 minutes on both side!

Crispy Carnivore Chicken Drumsticks πŸ—

Who doesn’t love a crunchy crispy chicken drumstick?

Up until now, I have been limiting pork and chicken consumption because of the unfavorable omega profile. When chicken and pigs are fed a diet rich inflammatory fats like linoleic acid (found in corn and soy), those fats are incorporated into their cell membranes, which I don’t want to consume!

Thanks to Apsey Farms (use code HELEN10) I can enjoy corn and soy free chicken which has a better fatty acid profile 😍- more healthy omega 3 polyunsaturated fatty acids and less inflammatory omega 6s πŸ˜‡

I really enjoy variety in my carnivore diet, so these drumsticks are a fun inclusion 😁

To make you need:

Chicken drumsticks πŸ—

Smoked sea salt πŸ§‚

White pepper 🌢 (low in oxalates)

An airfryer !

How to:

Pat your drumsticks dry and preheat the airfryer to 400Β°F!

Season your drumsticks with smoked sea salt and white pepper (other spices work too if you’re not as strict). Airfry the drumsticks for about 30 minutes, flip halfway if you want (not necessary)!

I like to serve these on the side with some other meats, and I use plenty of butter 🧈
