We have posted this iconic German delicacy before but this time we are leveling it up with a bomb pan sauce ๐

To make you need:
1 lb ground beef ๐ฎ
1 lb ground pork ๐ท
1/2 finely chopped onion ๐ง
4 tablespoons coconut flour ๐ฅฅ
2 eggs ๐ฅ
Ancestral fat like lard for frying ๐ณ
Salt and pepper ๐ง
For the sauce:
Heavy cream ๐ฅ
More seasoning ๐ง
Optimally some parmesan or pecorino ๐ง
To make:
Combine the meat, eggs, coconut flour, onion and spices in a bowl and mix thoroughly ๐
If you like, you can also add in finely chopped bell pepper, but traditionally, itโs just onion. Next, form large round meatballs with your hand.
Fry the meatballs in lard, usually they need about 20-25 minutes total depending on their size.
Make sure the lard is hot so that you can get a nice sear and crust. When they are ready, remove them from the pan and add in the cream to deglaze the pan ๐ all the yummy drippings will create a great flavor profile. Add more seasoning to taste and optionally grate in some raw parmesan or pecorino ๐ง
Serve either as is or with a low carb side like miracle noodles ๐
