Umami Breakfast Plate 🍳

Breakfast is one of my favorite meals of the day 🤩 and I love to make sure I get a good balance of protein, eat, fiber and veggies to fuel my day 🙏

Eggs are one of my favorite protein sources that I love to pair with avocado 🥑 and grain free bread 🍞

This time we are taking an umami approach with mushroom-onion sunny side up eggs ☀️ paired with avocado and tomato toast 🥑🍅

What you need for 1 plate:

2-3 eggs 🥚

Mushrooms of your choice 🍄

Mire poix veggies (carrot, celery, onion) 🥕🧅

1/2 large tomato 🍅

1/2 large avocado 🥑

MCT Mayo to taste 😍

Salt, pepper, seaweed seasoning 🧂

2-3 slices of grain free toast 🥪 (we love UnBun)

Ancestral fat for frying eggs 🍳

How to:

Begin by heating up your favorite healthy oil in a pan. Sauté the mire poix veggies and mushrooms until they are browned.

While that is cooking, toast your bread and slice your avocado and tomato 🍅

When the veggies are ready, add in the eggs and cook to your desired temperature. Sprinkle on your seaweed seasoning, salt, pepper, garlic etc

Next spread the avocado, tomato and mayonnaise onto the toast, and sprinkle with the seasoning.

Now you can either top the toast with the egg nests or eat them on the side 😍
