Hi friends, today Iโm sharing another one of my recipes that kept me overwater as we say in Germany after my wisdom tooth extraction.
Iโve really been loving the creamy texture of yogurt but unfortunately I had to take a course of antibiotics which meant no yogurt for me for some of my meals ๐ฅฒ
Luckily I am creative, so I made this delicious dairy free alternative that is creamy, protein packed and full of healthy fat and fiber!
The texture kind of remind me of rice pudding which was a childhood favorite of mine- unfortunately Iโm not having any grains right now so this was a pleasant surprise ๐
In Germany rice pudding is served with apple sauce and cinnamon which is of course what I recreated here ๐ฅน
Stewed apples also have the nice benefit that they are rich in pectin which is very nourishing for the gut flora. It also acts as a gentle binder which will both be very helpful after being on antibiotics and having so many medications in my system! Detox is a must ๐ค lucky for me, apples are locally in season here in Canada , but more on that later ๐คฉ
I chose to blend the chia pudding to give it a more pleasurable texture , but I know many people also enjoy it unblended so do what you love ๐ฅฐ
I also add a scoop of beef protein isolate since Iโm unable to chew actual meat at this time and also to make this a complete meal. I love equip because itโs a beef protein isolate with clean ingredients. Although Iโm a โreal food firstโ person I do believe that sometimes we need a more processed alternative and Equip checks all my boxes ๐ค

Alternatively you can also use cacao powder in the recipe or just some stevia or monkfruit.
Why chia seeds?
Although previously I advocated for a more carnivore diet, I have changed my mind and believe that there is some benefit in including whole food plant sources in the diet. I still focus on a diet rich in animal foods but also include seasonal produce and raw seeds these days โบ๏ธ
Especially when it comes to obtaining essential fatty acids- seeds trump most animal foods. We need raw whole food omega 6 and omega 3 in the diet- of course not ultra processed seed oils , but raw forms of both omega 6 and omega 3 are critical for human health. In fact we need about 4x as much omega 6 as omega 3, which is crazy to think about this the entire health industry seems to be demonizing omega 6 these days ๐คจ
Parent essential fatty acids linoleic (omega 6) and alpha linolenic acid (omega 3) are primarily found in seeds. We need both the parent and the down stream fatty acids like DHA, EPA, and AA, because each fatty acid plays a different role in human metabolism. To avoid the parent fatty acids and just to consume the downstream metabolites through eggs and fish is missing a step and can have serious health consequences.
That being said, high quality seed products are critical. Always look for raw seeds and store them in a cold place since the oils are very fragile and prone to oxidation. When oxidized, I agree that the are โpoisonโ. But equally dangerous is a deficiency in an essential nutrient ๐
To obtain adequate levels of both omega 6 and 3 parent fatty acids, I consume Body Bio balance oil which delivers the proper ratio (4:1) of omega 6:3 in an unoxidized supplement. To get your hands on some you can use code HELEN15 โ I add it to most foods , just donโt heat it ๐

Additionally, chia seeds provide a large amount of fiber which helps our bowels detox.
One last cool fact- chia seeds absorb water and in doing so they structure it and create something called EZ water! Thatโs the type of water we need to have in our cells to structure and hydrate them!
To make one serving you need:
1/4 cup chia seeds
1 cup coconut milk
1 scoop protein powder- I used equip foods salted caramel : you can use code CUREEATED to save ๐ค
For the applesauce (2 large servings):
2 apples- I used ambrosia since those grow here in Canada ๐จ๐ฆ ๐
A dash of cinnamon to your liking
Optionally a dash of lemon juice ๐and monk fruit extract.

Raw Pumpkin Seed Butter
A2 yogurt (if not dairy free or on an antibiotic)
Homemade applesauce with cinnamon
How to:
Begin by adding 1 cup coconut milk into a blender. Add 1/4 cup of chia seeds and 1 scoop of the protein powder.
Blend until a creamy pudding forms, sometimes itโll be so thick that the blender is no longer able to process it.
Transfer to a bowl and eat right away or keep in the fridge for up to 3 days.
To make the applesauce, simply ๏ฟผcut them into small chunks and heat on the stove on low. You may need to add some water or lemon juice to keep them from drying out or burning. Eventually they should fall apart. Then you can add extra sweetener or cinnamon.
I like to arrange the chia pudding in a bowl and top mine with yogurt and homemade applesauce with cinnamon and cacao powder if Iโm lot on an antibiotic ๐
Also super delicious with fresh cherries, cacao powder and yogurt ๐จ
Or just with pumpkin seed butter and raw cacao powder ๐
