Although we do make some recipes that are more labor than intensive, most of our lunches are put together in a few minutes- I like to call it the power lunch! Itβs very nourishing but can be made quickly between daily activities π
This week- we made this combo on repeat: corn and soy free pork sausage with eggs and avocado ! So yummy and full of healthy fat and proteins π
Avocado is actually a fruit thatβs relatively low on the plant toxin spectrum so we include it in moderation π₯
To make you need:
2 pork sausage Patties π- I love Seven Sons sugar free pork sausage Pattieβs (more if you need more food)
2 eggs π³
1/2 avocado π₯
Animal fat for cooking- we use bacon grease of ghee π§
Your favorite spices- currently loving Redmonds All Purpose Season Salt π§
How to:
Heat up your favorite fat in a pan, and fry the pork Sausage. Usually they need about 4-5 minutes per side. When they are finished, remove them from the pan and fry up the eggs π³
Serve with half of an avocado sliced, and season to your liking π
