Summer Shrimp Bowl 🦐

Shrimp are a classic summer food for me, together with avocado it’s a match made in heaven 😍

The miracle rice with creamy sauce gives it comfort food vibes all married together with some spices.

It’s full of healthy fat and proteins with some plants for garnish- perfect for those on a β€œcarnivore ish” diet πŸ₯©

For One bowl you need:

8 ounces shrimp 🍀

Butter for searing 🧈

Green onion πŸ§…

Coconut milk πŸ₯› or heavy cream

Basil 🌿

Curry powder and sea salt plus other seasoning you love

Miracle rice 🍚

Avocado πŸ₯‘ for serving

To make:

Heat up butter in a pan and sautΓ© the shrimp with the green onion πŸ§…

When it’s ready, add the coconut milk and let simmer, season and add the basil.

Lastly, add the miracle rice and garnish with the avocado πŸ₯‘

You can also add sautΓ©ed zucchini πŸ™‚
