Shrimp are a classic summer food for me, together with avocado it’s a match made in heaven 😍
The miracle rice with creamy sauce gives it comfort food vibes all married together with some spices.
It’s full of healthy fat and proteins with some plants for garnish- perfect for those on a “carnivore ish” diet 🥩
For One bowl you need:
8 ounces shrimp 🍤
Butter for searing 🧈
Green onion 🧅
Coconut milk 🥛 or heavy cream
Curry powder and sea salt plus other seasoning you love
Miracle rice 🍚
Avocado 🥑 for serving
Heat up butter in a pan and sauté the shrimp with the green onion 🧅
When it’s ready, add the coconut milk and let simmer, season and add the basil.
Lastly, add the miracle rice and garnish with the avocado 🥑
You can also add sautéed zucchini 🙂
