Chicken and Pork Meatballs πŸ§†

Meatballs are a super easy carnivore meal prep item- we love to make a batch at the beginning of the week to have something for a quick lunch during the beginning of the week, they never last long πŸ˜‡

These are carnivore-ish, so not suitable for those on a strict elimination !

We are so lucky to have access to corn and soy free chicken and pork from Apsey Farms (use code HELEN10) πŸ™ˆ

To make you need:

1 lb ground pork πŸ–

1 lb ground chicken πŸ”

1/8 of an onion chopped (optional but not really ;)) πŸ§…

2 eggs 🍳

1 tablespoon physllium husk (optional binder)

Lard or ghee for frying 🧈

How to:

Mix all the ingredients together and form little balls- we like them to be about 4 ounces each.

Heat up lard in a cast iron and fry each meatball for about 8-10 minutes on each side!

Enjoy πŸ˜‰ if you’re not strict carnivore they taste yummy on a lettuce up with some mustard and pickles
