Oven Roasted Veal BreastπŸ–

I am a huge fan of veal, but with veal it’s always critical to check that it was raised humanely, meaning not tethered and raised together with its mom on real cows milk! You can tell the veal is high quality when the meat is bright red- ie the calf was not anemic πŸ˜‡ I am lucky to have access to high quality veal from Billy Doe Meats!

This bone in veal breast aka brisket was a real treat for me this past week! I roasted it slowly in the oven with sea salt, rosemary and bone broth and enjoyed the delicious fatty goodness 😍

While veal tends to be fairly lean, this veal breast is pretty marbled (lots of healthy saturated and monounsaturated fatty acids) and contains lots of tendons and bone which provide collagen and many minerals 😊

To make you need:

1 bone in veal breast (3 lbs) πŸ₯©

Rosemary πŸƒ

Sea salt πŸ§‚

Bone broth

How to:

Preheat the oven to 300Β°F . Place the veal breast in a oven dish, rub with salt and sprinkle with rosemary.

Add 3 cups of bone broth to the dish (you may have to replenish as the breast cooks) and cover the dish with a foil tent.

Roast the meat for at least 3 hours (the longer the better) and check occasionally to see if there’s enough moisture!

Carve it when it’s ready abs enjoy ! I added lots of grass fed butter and some egg yolks 🧈
