Happy Weekend ๐ I love a yummy egg tart and this makes a perfect Sunday brunch dish ๐๐ป
Other egg dishes I love are my egg cake, baked avocado eggs, my frittata or my classic omelet ๐ฅbut this is a special dish for a relaxed weekend brunch โ๏ธ
For each serving (1 mini tart) you need :
3 pastured eggs ๐ฅ
Handful of cherry tomatoes ๐
Ancestral fat for frying ๐ณ
Basil ๐ฟ
Salt and pepper ๐ง
Optionally green onion ๐ง
How to:
Begin by heating up your fat in the pan and if youโre using onion, finely cut those and sear them.
In a Bowl, Beat 3 eggs with salt and pepper and pour the egg mixture over the onions. When the eggs are a little set, sprinkle on the basil and lay the slices of tomato onto the egg. Put a lid on the pan and bake until the egg has set.
Enjoy with guacamole ๐ฅ and bacon ๐ฅ
