Happy Weekend π I love a yummy egg tart and this makes a perfect Sunday brunch dish ππ»
Other egg dishes I love are my egg cake, baked avocado eggs, my frittata or my classic omelet π₯but this is a special dish for a relaxed weekend brunch βοΈ
For each serving (1 mini tart) you need :
3 pastured eggs π₯
Handful of cherry tomatoes π
Ancestral fat for frying π³
Basil πΏ
Salt and pepper π§
Optionally green onion π§
How to:
Begin by heating up your fat in the pan and if youβre using onion, finely cut those and sear them.
In a Bowl, Beat 3 eggs with salt and pepper and pour the egg mixture over the onions. When the eggs are a little set, sprinkle on the basil and lay the slices of tomato onto the egg. Put a lid on the pan and bake until the egg has set.
Enjoy with guacamole π₯ and bacon π₯
