Happy Wednesday ! We are celebrating the beautiful weather with grilled lamb kabobs and this warm greek salad π₯π
Itβs chock full of colorful veggies and healthy fats making it an optimal summer side π
To make you need:
2 bell peppers π« (we love two different colors)
2 Zucchini π₯
1 eggplant π
Red onion π§
Olives π«
Olive oil π«
Salt π§
Lemon juice π
Parsley πΏ
How to:
Begin by cutting the veggies into little cubes, heat up some olive oil or another ancestral fat in a pan. Quickly sear the veggies until they are warm but still crisp. Season with salt, garlic and optionally oregano!


Remove from the pan, drizzle with more olive oil, lemon juice and top with olives π«
