Happy Weekend π Vital Choice Seafood makes it so easy to get in my weekly portion of shellfish with their precleaned and cooked frozen mussels π
Eating seafood is critical for optimal health and helps you get your fair share of minerals such as iodine, selenium and zinc (all important for a healthy thyroid π)! To learn more, check out my guide to seafood here π¦
These mussels can be made in a snap- simply heat them up and season to your liking, todays take is a bit more traditional (minus the wine π)!
For one portion you need:
1 lb of mussels (this will yield about 4 ounces of meat) π¦ͺ
Olive oil π«
Shallots or another onion π§
Garlic cloves π§
Salt and pepper π§
Bay leaf π
1 tablespoon fish sauce π
Fresh herbs like parsley πΏ
How to:
Begin by finely chopping the onions and garlic and sautΓ© them in olive oil in a pot. Season with salt and pepper.

Add in the mussels and cook them until they open up, add the fresh parsley, Bayleaf, the fish sauce and let it simmer. Enjoy with your favorite sides π optionally you can add butter π§ or dip a bread swap into the stock π
