Minced meat, cauliflower rice and curry…what can go wrong π
Minced meat dishes are a favorite lunch in our house, they are a great way to get in lots of healthy fats and proteins, as well as yummy vegetables and detoxing herbs and spices! Basically the perfect dish to support our fat fueled lives ππ»
Todayβs lunch bowl is full of juicy minced chicken, fresh broccolini, mushrooms and bell pepper, savory green onions and garlic which is all married together by the curry spiced riced cauliflower and basil π
Other bowls we have made include this chicken fennel hash or shrimp paella bowl π¦
To make you need (1 bowl):
5 ounces minced chicken π – I love Force of Nature, or check out my guide to chicken here!
1 cup riced cauliflower π
Thinly sliced mushroom π
1/2 orange bell Pepper π«
A few pieces of broccolini π₯¦
Green onion π§
Garlic and curry powder π§
Sea salt π§
Basil πΏ
Duck fat or another ancestral fat for frying π§
How to:
Heat up the duck fat and sautΓ© the minced chicken until itβs brown. Season with salt, pepper and garlic powder. Add in the finely chopped green onion, bell pepper, broccolini and riced cauliflower. Let it sautΓ© and season with curry and chopped basil. When itβs almost ready, add in the thinly sliced mushroom!
