Sole is a delicious and tender white fish that tastes marvelous when fried in butter π§
Since itβs so thin, it doesnβt need very long, just a few minutes on each side, so you want to make sure youβre monitoring it closely. The filets are typically very large and flat so you need to make sure your pan is big enough.
Salt and pepper are my favorite ways to season it, which bring out the yummy taste of the fish, and everything tastes better with butter right ? π

This dish goes very well with mashed cauliflower, tahini baked artichokes, lemon roasted broccoli, or simply steamed green beans or spinach π₯¦
To make one portion you need:
5-6 ounces of Petrale sole, this can sometimes be a few pieces depending on the size of the filets π
Ghee for frying π§
Salt and pepper π§
Fresh parsley to garnish πΏ
Butter to serve π§
Lemon infused Olive Oil to drizzle, we love Brightland π
How to:
Heat up ghee in the pan, and while that is melting, pat the filets dry and season them with salt and pepper on both sides.

Place Filets in the hot ghee and fry for 1-2 minutes, then flip and cook for another 1-2 minutes.

Remove from the pan, garnish with parsley and drizzle with lemon infused olive oil πΏπ§π
