This is a savory yet fresh summer lunch side that goes well as a base for a lunch bowl with protein such as Bolognese sauce, lamb gyros, or air fried shrimp with avocado 🥑🤩
To make this you need:
Your favorite garlic butter, or try this homemade version 🧈
1 large zucchini 🥒
1 large bell pepper 🫑
1-2 stalks or green onion or chopped yellow onion 🧅
Fresh chopped herbs like basil, oregano, chives or parsley 🌿
Salt and pepper 🧂
Garlic powder 🧄
Heat up the garlic butter in the pan. While that’s melting, finely chop the green onion/onion and add those into the pan. Season with dried oregano, salt and pepper. Let that sauté and finely chop the zucchini and bell pepper! Add those into the pan and sauté until you’ve reached your desired texture. Add in the fresh chopped herbs and season to taste!
Serve as a base or your lunch bowl with your favorite protein and fat such as avocado or whipped bell pepper tahini spread or tapenade!
