Bell Pepper Zucchini Hash πŸŒΆπŸ«‘πŸ§„

This is a savory yet fresh summer lunch side that goes well as a base for a lunch bowl with protein such as Bolognese sauce, lamb gyros, or air fried shrimp with avocado πŸ₯‘πŸ€©

To make this you need:

Your favorite garlic butter, or try this homemade version 🧈

1 large zucchini πŸ₯’

1 large bell pepper πŸ«‘

1-2 stalks or green onion or chopped yellow onion πŸ§…

Fresh chopped herbs like basil, oregano, chives or parsley 🌿

Salt and pepper πŸ§‚

Garlic powder πŸ§„

How to:

Heat up the garlic butter in the pan. While that’s melting, finely chop the green onion/onion and add those into the pan. Season with dried oregano, salt and pepper. Let that sautΓ© and finely chop the zucchini and bell pepper! Add those into the pan and sautΓ© until you’ve reached your desired texture. Add in the fresh chopped herbs and season to taste!

Serve as a base or your lunch bowl with your favorite protein and fat such as avocado or whipped bell pepper tahini spread or tapenade!
