Since the supply chain is a bit impacted by the winter weather, we havenβt been able to get our favorite wild caught salmon from Vital Choice, so weβve used the opportunity to experiment with other nutrient dense seafood! My entire seafood guide is here!
This time, we chose to tackle wild caught vermillion red snapper, which we got from Primal Pastures, caught off of the California coast. Although it was not one of the best fish we have eaten (itβs Not very flavorful), we made the best of it and decided to fry it in an egg bath (a dish I have enjoyed many times at the local pub in my hometown), which essentially created an adult fish stick which we enjoyed with ample Chosen Foods Keto MCT oil mayonnaise and a side of spinach and mashed romanesco π
I had accidentally recreated a staple meal of my childhood which consisted of Igloo Fishsticks, Igloo Creamed Spinach, boiled potato and Thommy Mayonnaise (my Germans will know π)

To make enough for 3 you need π©π»βπ³:
Any white fish, we chose red snapper but I think cod or halibut would work better π
1 egg π₯
Salt and pepper π§
Ghee or avocado oil for frying the fish
To make:
Start by heating up your cooking oil in a stainless steal pan
Remove skin from the fish, rinse and pat dry.
Next, cut it into equal sized chunks and salt and pepper all sides π§

Beat the egg in a shallow bowl, like you would for scrambled eggs and dunk each piece into the egg batter and place it directly into the hot fat π§

Cook for 4-5 minutes on one side and then flip it and cook until itβs fork tender, usually another 3-4 minutes
